Dreamy Golden Pumpkin Oats (GF, V)

Pumpkin SZN is here! Cooler weather, cozy sweaters, and all the comfy feels -- my absolute favorite time of year! With temperatures dropping, kids going back to school, and the pandemic still amidst, strengthening our immunity is so important to prioritize, now more than ever. I love drinking our Immune adaptogen blend as an almondmilk, or sometimes coconut milk, latte. Drinking Immune daily has become such a soothing ritual for me & some days I like to incorporate Immune into my meals.

Today, I created the dreamiest creamiest golden pumpkin oats using our Immune adaptogen blend! Literally feels like a warm hug in a bowl. Ultimate comfort food status if you ask me! Super easy to make too with just a few ingredients. Also, the salted cinnamon-pepper glazed topping I made is THE perfect compliment to this breakfast bowl! Make it, you won't regret it!



Pumpkin Oats:

1/4 or 1/3 cup pumpkin puree, depending on your desired thickness

1/4 cup coconut milk

1/2 cup almondmilk, vanilla or unflavored (or other plant milk of choice)

1/2 cup rolled oats

1 Tbsp chia seeds

2 tsp agave

1 tsp So Let's Try Immune adaptogen blend

1/8 tsp cinnamon


Cinnamon-Glazed Topping:

3 Tbsp crushed walnuts

2-3 Tbsp raw pumpkin seeds (pepitas)

2 Tbsp dried cranberries

1 tsp toasted sesame seeds, optional

scant 1/4 tsp cinnamon

2 pinches of pink salt

1 pinch of coarsely ground black pepper

2 tsp agave

1 Tbsp coconut oil


  1. In a small pot, warm the pumpkin puree and plant milks over medium-low heat until well combined.

  2. Carefully add in the remaining ingredients, stirring frequently until thickened.

  3. If you're making my recommended topping, start this while your oats cook. If not, skip ahead to step 5.

  4. In a small saucepan, heat coconut oil over medium-low heat. Add crushed walnuts, raw pumpkin seeds, dried cranberries, sesame seeds, and cinnamon to the pan. Mix well, add agave, salt, pepper, and mix again. Keep stirring until oil and agave have reduced and a nice glaze develops. Remove from heat.

  5. Once your oats have cooked and they are thick and creamy, remove from heat. If you find your oats are too thick for your preference, feel free to slowly add a little bit of plant milk until you've reached your desired consistency.

  6. Serve with the nutty topping and enjoy!
